Mini Egg Cookies – Easter Recipe!
What you will need:
Ingredients
- 315g Plain Flour
- 1 Teaspoon of Baking Soda
- 1 Teaspoon of Salt
- 225g Unsalted Butter (Soft, not melted)
- 150g White sugar
- 150g Light Brown Sugar
- 2 Teaspoon Vanilla Extract
- 2 Medium Eggs
- 150g Chocolate Chips
- 1 Small Bag Cadbury Mini Eggs

- 2 Bowls
- Hand Mixer or Wooden Spoon
- Spatula
- Baking Tray
- Oven
- Tablespoon
- Parchment Paper
- Apron
Method
- Wash your hands and put on your apron.
- Preheat the oven to 190 degrees and let it heat up while you make the cookie dough.
- Add 315g flour, 1 teaspoon of baking soda, and 1 teaspoon of salt into bowl 1 and mix.
- In bowl 2, add 225g soft butter, 150g of white sugar, 150g brown sugar and 2 teaspoons of vanilla until smooth and creamy.
- Crack eggs into the creamy mixture and stir.
- Slowly add the ingredients from bowl 1 into bowl 2 and mix together until everything is combined.
- Add 150g of chocolate chips and mix again.
- Scoop small balls of dough onto a baking tray.
- Press 2 - 3 Cadbury's Mini Eggs on top of each ball of cookie dough.
- Put the tray in the oven and bake for 8 - 9 minutes.
- Carefully remove the cookies from the oven and let them cool down for 10 minutes.
